Ingredients

  • lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • ¾ cup uncooked white rice or orzo
  • ¼ cup fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Add chicken, onion, carrots, celery, garlic, chicken broth, oregano, salt, and black pepper to the crockpot.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
  3. Remove chicken, shred with two forks, and return it to the slow cooker.
  4. Stir in rice or orzo, cover, and cook on high for 20–30 minutes until tender.
  5. Add lemon juice and lemon zest, stirring gently to combine.
  6. Taste and adjust seasoning if needed.
  7. Garnish if desired and serve warm.

Notes

  • You can substitute white rice for orzo, or use all rice for a gluten-free version (note: orzo is wheat-based).
  • Best when served with crusty bread or a simple side salad.
  • For a lighter broth, use low-sodium chicken broth and reduce added salt.
  • Chicken thighs can be used instead of breasts for deeper flavor.
