Crockpot Hamburger Potato Casserole – hearty, cheesy, and comforting slow-cooker dinner with layers of potatoes, seasoned ground beef, onions, and melted cheese.

- 1 lb ground beef
- 1 small onion, chopped
- 3 cups thinly sliced potatoes (about 4 medium)
- 1 (10.5 oz) can cream of mushroom soup
- ½ cup milk
- 1 cup shredded cheddar cheese (plus extra for topping)
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a skillet over medium heat, cook ground beef and chopped onion until beef is browned and onions are tender. Drain excess grease and season with salt, pepper, garlic powder, and paprika.
- In a bowl, combine cream of mushroom soup and milk until smooth.
- Lightly grease the slow cooker, then layer half of the sliced potatoes on the bottom. Add half of the beef mixture, half of the cheese, and a drizzle of the soup mixture. Repeat layers.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are tender.
- Sprinkle extra cheese on top during the last 10 minutes of cooking.
- Garnish with chopped parsley and serve warm.
