Description

Crockpot Ground Beef Sloppy Joe Pasta – a hearty, set-it-and-forget-it comfort meal where tender ground beef simmers with onions, peppers, and a sweet-tangy sauce, finished with melty cheddar over pasta cooked right in the slow cooker.

  • 1 small onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 3 cloves garlic, minced
  • 2 cups tomato sauce
  • ½ cup ketchup
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire-style sauce
  • 2 tbsp brown sugar
  • 1 tsp mustard
  • ½ tsp salt
  • ½ tsp black pepper
  • 2½ cups beef broth
  • 2 cups uncooked elbow pasta
  • 1½ cups shredded cheddar cheese
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if needed.
  2. Transfer beef to the slow cooker.
  3. Add onion, bell pepper, garlic, tomato sauce, ketchup, tomato paste, Worcestershire-style sauce, brown sugar, mustard, salt, and black pepper. Stir well.
  4. Pour in beef broth and mix to combine.
  5. Cover and cook on low for 3–4 hours.
  6. Stir in uncooked pasta, cover, and cook on high for 20–30 minutes until pasta is tender, stirring once halfway through.
  7. Stir in shredded cheddar cheese until melted and creamy.
  8. Garnish if desired and serve warm.

  • Optional parsley garnish adds color and freshness.
  • For a lighter version, use lean ground beef and reduce cheese amount.
  • You can substitute ground turkey for beef if desired.
