Description

These Crockpot French Dip Sandwiches deliver ultra‑tender beef cooked low and slow with beef broth, onion soup mix, fresh black pepper, and kosher salt, then shredded and returned to the pot for extra juiciness. The savory broth is perfect for dipping, while crusty rolls topped with melted Swiss or provolone cheese create a satisfying handheld meal. Ideal for busy weeknights, the set‑and‑forget method yields restaurant‑style flavor with minimal effort. Enjoy the melt‑soft beef and dip anytime

Ingredients

Scale
  • 2 1/2 lbs beef chuck roast
  • 2 (14.5‑oz) cans beef broth
  • 2 (1‑oz) packets onion soup mix
  • 1 tsp fresh black pepper
  • 1 tsp kosher salt
  • 2 tbsp olive oil
  • 6 crusty rolls
  • 6 slices Swiss or provolone cheese

Instructions

  1. Pat the beef dry and season lightly.
  2. Heat olive oil in a skillet over medium‑high heat and sear the beef on all sides until browned, about 3‑4 minutes per side.
  3. Transfer the seared beef to a crockpot.
  4. Add beef broth, onion soup mix, black pepper, and kosher salt.
  5. Cover and cook on low for 8 hours (or high for 4 hours) until the meat is fork‑tender.
  6. Remove the roast, shred with two forks, and return the shredded meat to the crockpot, stirring into the broth.
  7. Slice crusty rolls, place a slice of Swiss or provolone cheese on each, top with generous amounts of shredded beef, and optionally broil for 1‑2 minutes to melt the cheese.
  8. Serve sandwiches with hot broth for dipping.

Notes

  • For extra flavor
  • add a splash of Worcestershire sauce to the broth during the last hour of cooking. Let the assembled sandwiches rest for a few minutes before slicing to allow the cheese to set.
