- 2 lbs chicken breasts or thighs
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup milk
- 1 cup marinara or Alfredo sauce (depending on style)
- 1 cup frozen veggies (peas, corn, carrots, or mixed)
- 1 cup shredded mozzarella or cheddar cheese
- 1 tbsp Italian seasoning
- ½ tsp paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Prep the slow cooker: Lightly spray or grease the crockpot.
- Add chicken + flavor: Place chicken, onion, garlic, Italian seasoning, paprika, salt, and pepper into the crockpot.
- Add liquids: Pour in chicken broth, milk, and marinara or Alfredo sauce. Stir lightly.
- Cook: Cover and cook on LOW for 6 hours or HIGH for 3–4 hours.
- Shred chicken: Remove chicken, shred it, and return it to the crockpot.
- Add veggies + cheese: Stir in frozen veggies and cheese. Cook 10–15 more minutes until melted and warm.
- Serve: Enjoy with pasta, rice, potatoes, or on its own for a cozy, satisfying dinner!
