- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups potatoes, peeled and diced

- 4 cups chicken or beef broth
- 1 (10.5 oz) can cream of chicken soup
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ tsp paprika

- Fresh parsley or green onions, for garnish
Instructions
- Brown the beef: In a skillet, heat olive oil over medium heat. Add ground beef and onion. Cook until browned. Drain excess grease and transfer to the crockpot.
- Add veggies: Add potatoes, carrots, celery, and garlic to the crockpot.
- Pour in liquids: Add broth, cream of chicken soup, paprika, garlic powder, salt, and pepper. Stir gently to combine.
- Slow cook: Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until potatoes are tender.
- Make it creamy: Stir in shredded cheese and sour cream. Cook an additional 10–15 minutes until melted and creamy.
- Serve: Garnish with parsley or green onions and serve warm with crusty bread, crackers, or rolls.
Notes
- For a gluten-free version, use gluten-free cream of chicken soup and broth.
- If you prefer a thicker soup, mash a few potato cubes during the cooking process.
- Leftovers refrigerate well for 3–4 days. Reheat on the stove or in the microwave, stirring in a splash of broth if needed.
- You can swap ground beef for ground turkey for a lighter option.
