Description

Crock Pot Cajun Chicken Pasta – a creamy, slow cooker dish featuring Cajun-spiced chicken and pasta, perfect for family dinners or gatherings.


Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 8 oz cream cheese, cubed
  • 16 oz penne pasta
  • 1½ cups shredded cheddar cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Lightly grease the crock pot and add chicken breasts. Drizzle with olive oil and season with Cajun seasoning, garlic powder, onion powder, paprika, salt, and pepper.
  2. Add garlic, onion, and bell peppers on top of the chicken.
  3. Pour in chicken broth, cover, and cook on low for 6 hours or high for 3–4 hours until chicken is tender.
  4. Remove chicken, shred with forks, and return it to the crock pot.
  5. Stir in heavy cream and cream cheese until melted and smooth.
  6. Cook penne pasta separately according to package directions and drain.
  7. Add cooked pasta and shredded cheddar cheese to the crock pot, stirring until fully combined and creamy.
  8. Cover and cook an additional 10–15 minutes until heated through. Garnish and serve warm.

Notes

  • For a milder flavor, reduce Cajun seasoning or adjust to taste.
  • The cream cheese helps create a creamy sauce; you can substitute with additional cream if preferred.
  • Cook pasta separately to prevent it from soaking up too much sauce.
  • If you’re short on time, you can use pre-cooked chicken.
  • Garnish with fresh parsley for color and a fresh aroma.
