- 1 small onion, diced (optional)
- 1 packet taco seasoning
- ½ cup enchilada sauce
- 10 corn tortillas
- 1 ½ cups shredded cheddar or Mexican blend cheese
- 1 tbsp olive oil
- Salt and pepper, to taste
- Shredded lettuce
- Diced tomatoes
- Sour cream
- Salsa or pico de gallo
- Fresh cilantro
Instructions
- Preheat oven: Set to 425°F (220°C) and lightly grease a baking sheet.
- Cook the beef: In a skillet, heat olive oil over medium heat. Add ground beef (and onion, if using) and cook until browned. Drain grease.
- Season: Stir in taco seasoning and enchilada sauce. Simmer 2–3 minutes until thickened.
- Prepare tortillas: Warm corn tortillas for 20–30 seconds in the microwave so they bend easily.
- Assemble tacos: Add a spoonful of beef mixture to each tortilla and sprinkle with cheese. Fold in half and place on the baking sheet.
- Bake: Spray or brush lightly with oil. Bake for 8–10 minutes per side, flipping once, until crispy and golden.
- Serve: Add your favorite toppings and enjoy the crunch!

- Store leftovers in an airtight container for 2–3 days.
- For extra crispiness, bake an additional 1–2 minutes per side, watching closely.
