- 4 boneless, skinless chicken breasts (or thighs)
- 2 tbsp olive oil or butter
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 cup chicken broth
- 1 cup milk or heavy cream
- ½ cup sour cream or plain Greek yogurt
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
- 1 cup cooked rice (or more for serving)
- Fresh parsley, for garnish
Instructions
- Season chicken with paprika, garlic powder, onion powder, salt, and pepper.
- In a large skillet, heat olive oil over medium heat. Sear chicken 3–4 minutes per side until golden brown. Remove and set aside.
- In the same pan, add onion and sauté until translucent. Add garlic and cook for 30 seconds.
- Pour in chicken broth and stir, scraping up any browned bits from the pan.
- Add milk (or cream) and sour cream, whisking until smooth and creamy.
- Return chicken to the skillet. Simmer on low heat for 15–20 minutes until chicken is tender and sauce thickens.
- Serve smothered chicken over warm rice and spoon extra sauce on top. Garnish with parsley.
Notes
- You can use chicken thighs instead of breasts for juicier results.
- For a lighter version, use part-skim milk and plain Greek yogurt instead of sour cream.
- Leftovers keep well in the fridge for 3–4 days; reheat on the stovetop.
- To thicken the sauce faster, simmer a few extra minutes uncovered.
