Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain rice, uncooked
  • 1 ¾ cups chicken broth
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil and butter in a large skillet over medium heat. Sear chicken on both sides until golden brown (about 4 minutes per side). Remove and set aside.
  3. In the same skillet, sauté onion until soft and translucent. Add garlic and cook for 30 seconds.
  4. Stir in uncooked rice, coating it lightly in the oil and butter mixture for about 1 minute.
  5. Pour in chicken broth and heavy cream, stirring well to combine.
  6. Return chicken to the skillet, nestling it into the rice mixture. Sprinkle with Parmesan cheese.
  7. Cover and simmer on low heat for 20–25 minutes, until rice is tender and chicken is cooked through.
  8. Remove from heat, fluff the rice, and garnish with parsley before serving warm.

Notes

  • For a lighter version, you can substitute half-and-half for heavy cream, though the sauce will be less rich.
  • Leftovers refrigerate well for 2–3 days; reheat gently on the stovetop or in the microwave.
  • Adding a squeeze of lemon juice at the end brightens the sauce if desired.
