- 12 oz pasta (penne, rotini, or shells)
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
- 4 oz cream cheese, softened
- ½ cup beef broth
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1 cup shredded cheddar or Mexican blend cheese
- 2 tbsp chopped green onions or parsley (optional, for garnish)
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
- Stir in Rotel tomatoes and beef broth. Simmer for 3–4 minutes.
- Add cream cheese and stir until melted and smooth.
- Season with salt, black pepper, and paprika.
- Add cooked pasta to the skillet and toss until fully coated in the sauce.
- Stir in shredded cheese until melted and creamy.
- Garnish if desired and serve hot.
Notes
- For extra heat, add a diced jalapeño or extra green chilies.
- Stir in a splash of milk or cream for extra creaminess.
- Make it gluten-free by using gluten-free pasta.
- Leftovers refrigerate well for up to 3-4 days.
