- 8 oz pasta (penne, fettuccine, or spaghetti)
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 small onion, finely chopped
- 1 can (14 oz) crushed or diced tomatoes
- ½ cup heavy cream (or coconut cream for vegan option)
- ¼ cup grated Parmesan cheese (optional for vegan: nutritional yeast)
- 1 tsp Italian seasoning
- ½ tsp chili flakes (optional)
- Salt and black pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Cook pasta according to package directions. Reserve ½ cup of pasta water, then drain and set aside.
- In a skillet, heat olive oil over medium heat. Add onion and cook until translucent, about 3–4 minutes.
- Add garlic and sauté for 30 seconds until fragrant.
- Stir in crushed tomatoes, Italian seasoning, salt, pepper, and chili flakes. Simmer for 8–10 minutes.
- Lower the heat and stir in heavy cream and Parmesan cheese. Mix until smooth and creamy.
- Add cooked pasta and toss to coat, adding a splash of reserved pasta water if needed for creaminess.
- Garnish with basil or parsley and serve immediately.
Notes
- To make vegan, use coconut cream and nutritional yeast instead of Parmesan.
- For gluten-free, use your favorite gluten-free pasta.
- Adjust chili flakes to taste for heat.
