- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced potatoes
- 1 cup frozen corn
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 can (15 oz) black beans, rinsed and drained
- 3 cups beef broth
- 1 cup milk
- ½ cup heavy cream
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup shredded cheddar cheese
- 2 tbsp chopped green onions or parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
- Stir in diced potatoes, corn, kidney beans, black beans, chili powder, cumin, paprika, salt, and black pepper.
- Pour in beef broth and bring to a gentle boil.
- Reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
- Stir in milk and heavy cream and simmer for 5 minutes.
- Add shredded cheddar cheese and stir until melted and creamy.
- Taste and adjust seasoning if needed.
- Garnish with green onions or parsley and serve warm.
Notes
- Make this soup ahead and reheat; it thickens slightly as it sits.
- For a milder flavor, reduce chili powder to ½ teaspoon.
- Can be made gluten free by using a gluten free beef broth (check label).
