- 1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1 cup heavy cream
- ½ cup chicken broth
- ¾ cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- 2 tbsp chopped parsley (optional, for garnish)
Instructions
- Heat olive oil and butter in a large skillet over medium heat.
- Add chicken, season with salt, black pepper, and paprika, and cook for 5-6 minutes until lightly golden and cooked through. Remove chicken and set aside.
- In the same skillet, add mushrooms and cook for 4-5 minutes until softened and lightly browned.
- Add garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine.
- Stir in Parmesan cheese and Italian seasoning and simmer for 3-4 minutes until the sauce thickens.
- Add spinach and cook until wilted.
- Return chicken to the skillet and toss until well coated in the creamy sauce.
- Simmer for 2-3 minutes, then garnish if desired and serve warm.
