Creamy Cajun Sausage Pasta (One Pot) – Bold, creamy, and full of smoky Cajun flavor, this one-pot pasta delivers weeknight comfort with juicy sausage, tender pasta, and a rich Cajun cream sauce.

- 1 tbsp olive oil
- 12 oz smoked sausage (such as beef or turkey), sliced into rounds
- 1 small onion, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 2 1/2 cups chicken broth
- 1 cup heavy cream (or half-and-half)
- 8 oz penne pasta (uncooked)
- 1 1/2 tsp Cajun seasoning (add more to taste)
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1 cup shredded Parmesan or mozzarella cheese
- Fresh parsley or green onions, for garnish
Instructions
- Heat olive oil in a large skillet or deep pan over medium heat. Add sausage and cook until browned on both sides. Remove and set aside.
- In the same pan, sauté onion and bell pepper for 3–4 minutes until softened. Add garlic and cook 30 seconds until fragrant.
- Stir in Cajun seasoning, paprika, and pepper.
- Add chicken broth, cream, and uncooked pasta. Bring to a boil, then reduce heat and simmer uncovered for 10–12 minutes, stirring occasionally, until pasta is al dente and sauce thickens.
- Return sausage to the pan and stir in cheese until melted and creamy.
- Garnish with parsley or green onions and serve warm.
Notes
- Substitute smoked sausage with beef or turkey sausage as listed.
- Adjust Cajun seasoning to taste for more or less heat.
- Leftovers keep refrigerated for up to 3 days.
