- 2 tbsp brown sugar
- 2 tbsp Dijon mustard
- 3 cloves garlic, minced
- ½ cup chicken broth
- ½ cup heavy cream (or coconut cream for a dairy-free option)
- 1 tbsp apple cider vinegar or lemon juice
- 1 tsp fresh thyme (or ½ tsp dried thyme)
- Fresh parsley, for garnish
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 4–5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Stir in brown sugar, Dijon mustard, chicken broth, and apple cider vinegar. Whisk well and simmer for 2–3 minutes.
- Reduce heat to low, pour in heavy cream, and stir until smooth and slightly thickened.
- Return chicken thighs to the skillet, spooning the sauce over them. Simmer for another 3–5 minutes to let the flavors blend.
- Garnish with fresh thyme or parsley and serve warm with rice, mashed potatoes, or roasted vegetables.
