Ingredients
Scale
- 12 oz pasta (penne, rotini, or fettuccine)
- 1 lb chicken breast, sliced or cubed
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 cup chicken broth
- 1 cup milk
- 1 (5.2 oz) Boursin garlic & herb cheese
- ½ cup heavy cream
- ½ cup grated Parmesan
- ½ tsp Italian seasoning
- ½ tsp black pepper
- Salt, to taste
- Fresh basil or parsley, for garnish
Instructions
- Cook the pasta: Boil pasta according to package instructions. Drain and set aside.
- Cook the chicken: Heat olive oil in a large skillet. Season chicken with salt, pepper, and Italian seasoning. Cook until golden and fully cooked. Remove and set aside.
- Sauté aromatics: Add garlic and onion to the skillet. Cook 1–2 minutes until fragrant and softened.
- Build the sauce: Pour in chicken broth and milk. Add the Boursin cheese and stir until completely melted and creamy.
- Add richness: Stir in heavy cream and Parmesan. Simmer 2–3 minutes until slightly thickened.
- Combine: Return chicken to the skillet and toss in the cooked pasta until fully coated in the sauce.
- Serve: Garnish with basil or parsley and enjoy warm — creamy perfection in every bite!
Notes
- To save time, prep ingredients ahead or use pre-cut chicken.
- For a lighter version, use half-and-half instead of heavy cream.
- Leftovers store in the fridge for up to 3 days.
