Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups uncooked pasta (elbow or rotini)
  • 2 cups beef broth
  • 1 cup milk
  • 1 packet ranch seasoning mix
  • 1½ cups shredded cheddar cheese
  • ½ tsp black pepper
  • ½ tsp paprika
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
  2. Stir in onion and cook for 2–3 minutes until softened. Add garlic and cook 30 seconds.
  3. Add uncooked pasta, beef broth, milk, ranch seasoning, black pepper, and paprika. Stir well.
  4. Bring to a boil, then reduce heat and cover. Simmer 12–15 minutes, stirring occasionally, until pasta is tender.
  5. Remove from heat and stir in shredded cheddar until melted and creamy.
  6. Garnish if desired and serve warm.
