- 1 lb ground beef
- 1 tbsp olive oil
- ½ small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups uncooked pasta (elbow or rotini)
- 2 cups beef broth
- 1 cup milk
- 1 packet ranch seasoning mix
- 1½ cups shredded cheddar cheese
- ½ tsp black pepper
- ½ tsp paprika
- 2 tbsp chopped parsley (optional, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
- Stir in onion and cook for 2–3 minutes until softened. Add garlic and cook 30 seconds.
- Add uncooked pasta, beef broth, milk, ranch seasoning, black pepper, and paprika. Stir well.
- Bring to a boil, then reduce heat and cover. Simmer 12–15 minutes, stirring occasionally, until pasta is tender.
- Remove from heat and stir in shredded cheddar until melted and creamy.
- Garnish if desired and serve warm.
Notes
- One-pot preparation for easy cleanup.
- Leftovers refrigerate well for 3-4 days.
- For a spicier version, add a pinch of red pepper flakes.
