Cowboy Corn Dip is a creamy, cheesy Southwestern-inspired crowd-pleaser that makes any party pop with bold flavor and melt-in-your-mouth cheese.

- 2 cans (15 oz each) whole kernel corn, drained
- 1 red bell pepper, finely diced
- 1 jalapeño pepper, seeded and finely chopped (adjust to taste)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ¾ cup mayonnaise
- ¾ cup sour cream
- 1 tsp chili powder
- ½ tsp smoked paprika
- ¼ tsp garlic powder
- ¼ tsp salt
- ¼ tsp black pepper
- 2 green onions, thinly sliced (plus more for garnish)
- Optional: ½ cup cooked and crumbled turkey bacon for extra flavor
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a medium baking dish.
- In a large bowl, combine corn, bell pepper, jalapeño, cheddar cheese, Monterey Jack cheese, mayonnaise, sour cream, chili powder, smoked paprika, garlic powder, salt, and pepper.
- Mix until all ingredients are evenly coated and creamy.
- Sprea d the mixture evenly into the prepared baking dish.
- Bake for 20–25 minutes, or until the dip is hot and bubbly with melted, golden cheese on top.
- Remove from oven and let cool slightly. Sprinkle with chopped green onions and optional turkey bacon for garnish.
- Serve warm with tortilla chips, crackers, or fresh veggies.
