Description

Cowboy Corn Dip is a creamy, cheesy Southwestern-inspired crowd-pleaser that makes any party pop with bold flavor and melt-in-your-mouth cheese.


Ingredients

  • 2 cans (15 oz each) whole kernel corn, drained
  • 1 red bell pepper, finely diced
  • 1 jalapeño pepper, seeded and finely chopped (adjust to taste)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ¾ cup mayonnaise
  • ¾ cup sour cream
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 green onions, thinly sliced (plus more for garnish)
  • Optional: ½ cup cooked and crumbled turkey bacon for extra flavor

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a medium baking dish.
  2. In a large bowl, combine corn, bell pepper, jalapeño, cheddar cheese, Monterey Jack cheese, mayonnaise, sour cream, chili powder, smoked paprika, garlic powder, salt, and pepper.
  3. Mix until all ingredients are evenly coated and creamy.
  4. Sprea d the mixture evenly into the prepared baking dish.
  5. Bake for 20–25 minutes, or until the dip is hot and bubbly with melted, golden cheese on top.
  6. Remove from oven and let cool slightly. Sprinkle with chopped green onions and optional turkey bacon for garnish.
  7. Serve warm with tortilla chips, crackers, or fresh veggies.
