- 1½ lbs ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (10.5 oz) gluten-free cream of mushroom soup
- ½ cup milk
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup frozen corn
- 2 cups shredded cheddar cheese
- 1 bag (32 oz) frozen tater tots
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
- Stir in cream of mushroom soup, milk, paprika, salt, and black pepper until smooth.
- Fold in frozen corn and remove from heat.
- Spread the beef mixture evenly into the prepared baking dish.
- Sprinkle shredded cheese evenly over the top.
- Arrange tater tots in a single layer over the cheese.
- Bake uncovered for 40–45 minutes, or until tater tots are golden and crispy.
- Let rest for 5 minutes before serving.
Notes
- Gluten-free: uses gluten-free cream of mushroom soup.
