- 4 cups diced potatoes (peeled or unpeeled)
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- ½ tsp paprika
- Salt and black pepper to taste
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- 2 cups shredded cheddar cheese
- Optional: chopped green onions for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook ground beef with onion until browned. Drain excess fat.
- Add garlic, chili powder, paprika, salt, and pepper. Stir and cook for 1 minute.
- Stir in cream of mushroom soup and milk until well combined.
- Spread diced potatoes evenly in the baking dish.
- Spoon the beef mixture over the potatoes and spread evenly.
- Sprinkle shredded cheddar cheese on top.
- Cover with foil and bake for 35 minutes.
- Remove foil and bake an additional 15 minutes, until potatoes are tender and cheese is bubbly.
- Let rest for 5 minutes before serving. Garnish if desired.

- Tip: You can use peeled or unpeeled potatoes.
- Let the casserole rest for a few minutes before serving to let it set.
- Garnish with chopped green onions for extra color and flavor.
- Leftovers reheat well in the microwave or oven.
