Description

Cowboy Casserole is a hearty, comforting beef-based casserole featuring ground beef, crispy tater tots, and melty cheese.


Ingredients

  • 1 small onion, chopped
  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
  • 1 (15 oz) can corn, drained
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • Salt and pepper, to taste
  • 1 (32 oz) bag frozen tater tots
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Fresh parsley or green onions, for garnish

Instructions

  1. Preheat oven: Set to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the beef: In a large skillet, heat olive oil over medium heat. Add ground beef and onion, cooking until beef is browned and onion is soft. Drain excess grease.
  3. Mix the filling: Stir in cream of mushroom soup, corn, sour cream, cheddar cheese, garlic powder, paprika, salt, and pepper. Mix until creamy and well combined.
  4. Assemble the casserole: Spread the beef mixture evenly into the prepared baking dish. Top with a layer of tater tots. Sprinkle with extra cheese if desired.
