Description

Cowboy Breakfast Sliders are bold, hearty, cheesy bites that pack fluffy scrambled eggs, turkey sausage, turkey bacon, and sharp cheddar on soft Hawaiian rolls for a grab-and-go breakfast.

Ingredients

Scale
  • 12 Hawaiian sweet rolls
  • 8 large eggs
  • ½ lb ground turkey breakfast sausage
  • 6 slices turkey bacon, cooked and crumbled
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1½ cups shredded sharp cheddar cheese
  • 3 tbsp unsalted butter, melted
  • ½ tsp garlic powder
  • ½ tsp dried parsley

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add ground turkey sausage and cook until browned, breaking it apart as it cooks. Remove from skillet and set aside.
  3. In a bowl, whisk eggs with salt and black pepper. Scramble eggs in the same skillet until just set.
  4. Slice Hawaiian rolls in half horizontally and place the bottom halves in the baking dish.
  5. Layer scrambled eggs evenly over the rolls, followed by cooked sausage, crumbled turkey bacon, and shredded cheddar cheese.
  6. Place the top halves of the rolls over the filling.
  7. In a small bowl, mix melted butter, garlic powder, and parsley. Brush generously over the tops of the rolls.
  8. Cover loosely with foil and bake for 12-15 minutes, until heated through and cheese is melted.
  9. Remove foil and bake an additional 5 minutes until tops are lightly golden.
  10. Slice into sliders and serve warm.

Notes

  • Prep ahead: Assemble and refrigerate the dish overnight; bake as directed in the morning for fresh sliders.
  • Leftovers can be reheated in the oven or microwave; store in the fridge for up to 2 days.
  • The recipe uses gluten-containing Hawaiian rolls; for a gluten-free version, substitute with gluten-free slider rolls (results may vary).
  • To add a little heat, sprinkle red pepper flakes into the eggs before cooking.
