Description
Christmas Pecan Turtles: three-step gooey decadence featuring crunchy pecans, caramel, and chocolate.
Ingredients
Scale
- 2 cups pecan halves
- 30 soft caramels (unwrapped)
- 2 tbsp heavy cream
- 1 1/2 cups semi-sweet or milk chocolate chips
- 1 tbsp coconut oil (optional, for smooth melting)
- Sea salt flakes (optional, for topping)
Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Arrange pecans in clusters of three or four on the sheet (these form the turtle legs).
- In a microwave-safe bowl, melt caramels with heavy cream in 30-second intervals, stirring until smooth.
- Spoon a small dollop of caramel over each pecan cluster, letting it drip slightly.
- Chill in the fridge for 10–15 minutes until caramel firms up.
- Melt chocolate chips with coconut oil (if using) until smooth. Spoon over caramel layer, spreading gently to cover.
- Sprinkle lightly with sea salt (optional).
- Chill again until set, about 20 minutes.
- Store in an airtight container.
Notes
- For even clusters, use three or four pecan halves per turtle.
- Substitute dark chocolate chips or a chocolate blend if you prefer a different flavor.
- Chilling helps the caramel and chocolate set firmly.
