Description

Christmas Pecan Turtles: three-step gooey decadence featuring crunchy pecans, caramel, and chocolate.


Ingredients

  • 2 cups pecan halves
  • 30 soft caramels (unwrapped)
  • 2 tbsp heavy cream
  • 1 1/2 cups semi-sweet or milk chocolate chips
  • 1 tbsp coconut oil (optional, for smooth melting)
  • Sea salt flakes (optional, for topping)

Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Arrange pecans in clusters of three or four on the sheet (these form the turtle legs).
  3. In a microwave-safe bowl, melt caramels with heavy cream in 30-second intervals, stirring until smooth.
  4. Spoon a small dollop of caramel over each pecan cluster, letting it drip slightly.
  5. Chill in the fridge for 10–15 minutes until caramel firms up.
  6. Melt chocolate chips with coconut oil (if using) until smooth. Spoon over caramel layer, spreading gently to cover.
  7. Sprinkle lightly with sea salt (optional).
  8. Chill again until set, about 20 minutes.
  9. Store in an airtight container.

Notes

  • For even clusters, use three or four pecan halves per turtle.
  • Substitute dark chocolate chips or a chocolate blend if you prefer a different flavor.
