Chicken Stroganoff: a creamy, easy, and tasty 30-minute dish.

- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized strips
- Salt and pepper, to taste
- 2 tbsp butter
- 1 small onion, finely chopped
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 tbsp flour
- 1 cup chicken broth
- ½ cup sour cream
- 1 tsp Dijon mustard
- ½ tsp paprika
- Fresh parsley, for garnish
- Cooked egg noodles or rice, for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then sauté for 4–5 minutes per side until golden and cooked through. Remove from the skillet and set aside.
- In the same skillet, melt butter and add onions and mushrooms. Sauté for 5–6 minutes until softened and lightly browned.
- Stir in garlic and cook for 30 seconds until fragrant.
- Sprinkle flour over the vegetables and stir for 1 minute to coat.
- Gradually whisk in chicken broth, stirring until smooth and slightly thickened.
- Reduce heat to low and stir in sour cream, Dijon mustard, and paprika until creamy. Do not boil.
- Return chicken to the skillet and stir to coat in sauce. Simmer for 2–3 minutes to heat through.
- Serve warm over egg noodles, rice, or mashed potatoes, and garnish with fresh parsley.
