Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cream of tartar, and salt.
  3. In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
  4. Add the egg, egg yolk, and vanilla extract. Mix until smooth and creamy.
  5. Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms.
  6. Scoop 2 tablespoons of dough per cookie, roll into balls, and place on prepared baking sheets about 2 inches apart.
  7. Bake for 9–11 minutes, until edges are lightly golden but centers are soft.
  8. Let cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
