Description

Ingredients

  • ¾ cup brown sugar

  • 1 tsp cream of tartar
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp pumpkin pie spice
  • ¼ tsp salt

For the Cinnamon Sugar Coating:

  • ¼ cup granulated sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk browned butter, brown sugar, and granulated sugar until smooth.
  3. Add pumpkin puree, egg yolk, and vanilla; whisk until fully combined.
  4. In another bowl, mix flour, cream of tartar, baking soda, cinnamon, pumpkin pie spice, and salt.
  5. Stir dry ingredients into wet ingredients until a soft dough forms.
  6. In a small bowl, mix sugar and cinnamon for coating.
  7. Scoop about 2 tablespoons of dough per cookie, roll into a ball, and coat thoroughly in cinnamon sugar.
  8. Place cookies about 2 inches apart on the prepared baking sheet and bake 10–12 minutes, until the edges are set and the centers look slightly underbaked.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Enjoy warm and chewy!
