- ¾ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 2 tsp instant espresso powder (or finely ground coffee)
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup chopped semi-sweet chocolate
- ½ cup dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream butter and sugars until light and fluffy.
- Mix in egg, espresso powder, and vanilla extract until smooth.
- In another bowl, whisk flour, cocoa powder, baking soda, and salt.
- Gradually add dry ingredients to wet, mixing until just combined.
- Fold in chopped semi-sweet chocolate and dark chocolate chips.
- Scoop tablespoon-sized dough balls onto prepared baking sheets.
- Bake 9–11 minutes, until edges are set but centers remain soft.
- Cool on the sheet for 5 minutes before transferring to a wire rack.
Notes
- Storage: Keep in an airtight container at room temperature for up to 5 days.
- For extra chewiness, underbake slightly and let cookies rest on the baking sheet.
- Use a mix of dark and semisweet chocolate chips for depth of flavor.
- If you don’t have espresso powder, substitute with 1 tablespoon finely ground coffee dissolved in 1 tablespoon hot water.
