Description

Cheesy Taco Potatoes are crispy, comforting, and packed with bold taco flavor. Golden roasted potatoes are topped with seasoned ground beef, melty cheese, and crave-worthy taco-style toppings for a quick, crowd-pleasing Tex-Mex twist.


Ingredients

  • 2 lbs russet potatoes, peeled and small diced
  • 34 tbsp olive oil
  • 1½ tsp salt
  • ½ tsp black pepper
  • 1 lb ground beef
  • 1 packet taco seasoning
  • ½ cup water
  • 1½ cups shredded cheddar or Mexican blend cheese
  • ½ cup sour cream (optional, for serving)
  • ½ cup diced tomatoes (optional)
  • 2 tbsp chopped green onions or cilantro (optional, for garnish)

Instructions

  1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Toss diced potatoes with olive oil, salt, and black pepper. Spread evenly on the baking sheet.
  3. Roast for 20–25 minutes, stirring once, until potatoes are golden and crispy.
  4. While potatoes roast, cook ground beef in a skillet over medium heat until browned, breaking it apart as it cooks. Drain excess fat if needed.
  5. Stir in taco seasoning and water. Simmer for 3–4 minutes until thickened.
  6. Remove potatoes from oven and sprinkle seasoned beef evenly over the top.
  7. Add shredded cheese and return to the oven for 5–7 minutes, until cheese is melted and bubbly.
  8. Garnish with desired toppings and serve hot.
