Cheesy Steak and Rice Skillet: a quick, one-pan comfort meal featuring juicy steak bites, fluffy seasoned rice, and gooey melted cheese.

- 1 lb sirloin steak, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups beef broth
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp dried thyme
- 1½ cups shredded cheddar or mozzarella cheese
- 2 tbsp chopped parsley or green onions (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add steak pieces, season with salt and pepper, and cook for 3–4 minutes until browned. Remove and set aside.
- In the same skillet, sauté onion for 2–3 minutes until softened. Add garlic and cook for 30 seconds.
- Stir in rice, paprika, and thyme.
- Pour in beef broth, bring to a simmer, then reduce heat to low. Cover and cook for 15–18 minutes until rice is tender.
- Return steak to the skillet and stir gently to combine.
- Sprinkle cheese evenly over the top. Cover for 2–3 minutes until melted and gooey.
- Garnish if desired and serve warm.
Notes
- You can substitute mozzarella for cheddar if you prefer a milder melt.
- For a bit of heat, add a pinch of red pepper flakes with the onions.
- Leftovers refrigerate well for meal prep; reheat gently on the stove or in the microwave.
