- 1 lb smoked turkey sausage, sliced into rounds
- 6 medium potatoes, diced
- 2 tbsp olive oil
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- ½ cup mozzarella cheese
- Salt and pepper, to taste
- 2 tbsp chopped parsley or green onions (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.
- In a large bowl, toss diced potatoes with olive oil, ranch seasoning, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on the baking dish. Bake for 25–30 minutes, stirring halfway through, until potatoes are tender and golden.
- Add sliced sausage to the pan, toss with the potatoes, and bake for an additional 15–20 minutes until the sausage is browned.
- Sprinkle cheddar and mozzarella cheese evenly over the top and bake for 5 more minutes, until melted and bubbly.
- Garnish with chopped parsley or green onions and serve warm.
