- 1½ lbs ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- 2 cups shredded Swiss cheese (divided)
- 2 tbsp chopped parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and mushrooms and sauté for 5-7 minutes until mushrooms are tender and lightly browned.
- Stir in garlic, salt, black pepper, and garlic powder. Cook for 30 seconds until fragrant.
- Add cream of mushroom soup and milk. Stir until smooth and well combined.
- Remove from heat and stir in 1½ cups of Swiss cheese.
- Transfer mixture to the prepared baking dish and spread evenly.
- Sprinkle remaining cheese over the top.
- Bake uncovered for 30-35 minutes until bubbly and lightly golden.
- Let rest for 5 minutes, garnish if desired, and serve warm.
Notes
- Make-ahead: Assemble the casserole, cover, and refrigerate until ready to bake.
- For a gluten-free version, use a gluten-free cream of mushroom soup.
- Leftovers can be stored in the refrigerator for 3-4 days.
