Description

Cheesy Hamburger Rice Casserole is a comforting, classic one-dish meal with savory ground beef, tender rice, creamy mushroom soup, and plenty of melted cheddar cheese.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1½ cups shredded cheddar cheese (divided)
  • 2 tbsp chopped parsley or green onions (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
  4. Stir in uncooked rice, beef broth, cream of mushroom soup, salt, black pepper, and paprika. Mix well.
  5. Remove from heat and stir in 1 cup of shredded cheddar cheese.
  6. Transfer the mixture to the prepared baking dish and spread evenly.
  7. Cover tightly with foil and bake for 30–35 minutes, or until the rice is tender.
  8. Remove foil, sprinkle remaining cheese over the top, and bake uncovered for 8–10 minutes until melted and bubbly.
  9. Let rest for 5 minutes, garnish if desired, and serve warm.
