Description

Cheesy Hamburger Potato Casserole is a hearty, comforting, family-friendly dish layered with potatoes, seasoned ground beef, and plenty of melty cheese.


Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 56 medium potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup milk
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 cups shredded cheddar cheese (divided)
  • 2 tbsp chopped parsley or green onions (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
  4. Stir in paprika, Italian seasoning, salt, and black pepper. Remove from heat.
  5. In a bowl, whisk together cream of mushroom soup and milk until smooth.
  6. Layer half of the sliced potatoes in the baking dish. Top with half of the beef mixture and sprinkle with 1 cup of cheese.
  7. Repeat layers with remaining potatoes and beef, then pour the soup mixture evenly over the top.
  8. Cover tightly with foil and bake for 60 minutes, or until potatoes are fork-tender.
  9. Remove foil, sprinkle remaining cheese on top, and bake uncovered for 10–15 minutes until melted and golden.
  10. Let rest for 5 minutes, garnish with parsley or green onions, and serve warm.
