- 1½ lb ground beef
- 4 large russet potatoes, thinly sliced
- 1 medium onion, chopped
- 1 can (10.5 oz) cream of mushroom soup
- ¾ cup milk
- 1½ cups shredded cheddar cheese
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
- Stir in chopped onion, garlic powder, salt, and black pepper. Cook 2–3 minutes until softened.
- In a bowl, whisk together cream of mushroom soup and milk.
- Layer half of the sliced potatoes in the baking dish.
- Spread half of the beef mixture over the potatoes.
- Pour half of the soup mixture over the beef.
- Repeat layers with remaining potatoes, beef, and soup mixture.
- Cover tightly with foil and bake for 60 minutes.
- Remove foil, sprinkle shredded cheddar on top, and bake uncovered for 10–15 minutes until cheese is melted and bubbly.
- Let rest for 5–10 minutes before serving.

- You can substitute ground turkey for a lighter option.
- For a gluten-free version, use a gluten-free condensed cream of mushroom soup.
- Let the casserole rest 5–10 minutes before serving to help it set for easier slicing.
