Description

Cheesy Ground Beef Rice Casserole is a comforting, creamy classic featuring seasoned ground beef, rice, and melty cheese in a savory sauce.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 1½ cups shredded cheddar cheese (divided)
  • 2 tbsp chopped parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  3. Add onion and garlic to the skillet and sauté for 2–3 minutes until softened and fragrant.
  4. Stir in paprika, Italian seasoning, salt, and black pepper.
  5. Add rice, beef broth, cream of mushroom soup, sour cream, and 1 cup of shredded cheese. Mix until well combined.
  6. Transfer the mixture to the prepared baking dish and spread evenly.
  7. Cover tightly with foil and bake for 35–40 minutes, or until the rice is tender.
  8. Remove foil, sprinkle remaining cheese on top, and bake uncovered for 10 minutes until melted and bubbly.
  9. Garnish with chopped parsley and serve warm.

Notes

  • Leftovers refrigerate well for 3–4 days; reheat gently.
  • To make it lighter, substitute part-skim sour cream or Greek yogurt.
  • For a gluten-free version, use gluten-free cream of mushroom soup and ensure beef broth is gluten-free.
