Description
Cheesy Ground Beef & Potato Casserole is an easy, cozy one-pan comfort dish featuring tender potatoes, seasoned ground beef, and melty cheddar in a creamy sauce.

- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 medium potatoes, thinly sliced
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
- 1½ cups shredded cheddar cheese (divided)
- 2 tbsp chopped parsley or green onions (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
- Add onion and garlic to the beef and sauté for 2–3 minutes until fragrant and softened.
- Stir in paprika, Italian seasoning, salt, and black pepper. Remove from heat.
- In a bowl, whisk together cream of mushroom soup and milk until smooth.
- Layer half of the sliced potatoes in the baking dish. Top with half of the beef mixture and a light sprinkle of cheese.
- Repeat layers with remaining potatoes and beef, then pour the soup mixture evenly over the top.
- Cover tightly with foil and bake for 45 minutes, or until potatoes are fork-tender.
- Remove foil, sprinkle remaining cheese on top, and bake uncovered for 10–15 minutes until melted and bubbly.
- Garnish with parsley or green onions and serve warm.
Notes
- Leftover casserole can be stored in the refrigerator for 3–4 days.
- For a gluten-free version, ensure the soup and any seasonings are gluten-free or use a gluten-free cream of mushroom soup.
- To lighten the dish, use lean ground beef and part-skim cheddar.
