Cheesy Ground Beef & Potato Casserole (One-Pan Dinner!) — A warm, hearty weeknight classic featuring tender potatoes, seasoned ground beef, and gooey melted cheese baked in one pan.

- 1 lb ground beef (or ground turkey)
- 3 medium potatoes, thinly sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil or butter
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and black pepper, to taste
- 1 cup shredded cheddar cheese
- 1 cup mozzarella cheese
- 1 can (10.5 oz) cream of mushroom or cream of chicken soup
- ½ cup milk
- Chopped parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a skillet, heat olive oil and cook ground beef with diced onion and garlic until browned. Season with paprika, garlic powder, salt, and pepper. Drain any excess grease.
- In a small bowl, mix soup and milk until smooth.
- Layer half of the sliced potatoes in the baking dish, followed by half the beef mixture, and a bit of cheese. Repeat layers with remaining ingredients.
- Pour the soup mixture evenly over the top and cover tightly with foil.
- Bake for 45–50 minutes or until the potatoes are tender.
- Remove foil, sprinkle the remaining cheese on top, and bake uncovered for another 10 minutes until bubbly and golden.
- Garnish with chopped parsley and serve hot.
Notes
- You can use cream of mushroom or cream of chicken soup, depending on taste or availability.
- For a lighter version, use lean ground turkey and reduced-fat cheese.
- Leftovers refrigerate well; reheat gently for best texture.
- To speed prep, slice potatoes ahead of time and store in water to prevent browning.
