Description

Cheesy Ground Beef & Potato Casserole (One-Pan Dinner!) — A warm, hearty weeknight classic featuring tender potatoes, seasoned ground beef, and gooey melted cheese baked in one pan.


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 3 medium potatoes, thinly sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 cup mozzarella cheese
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • ½ cup milk
  • Chopped parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil and cook ground beef with diced onion and garlic until browned. Season with paprika, garlic powder, salt, and pepper. Drain any excess grease.
  3. In a small bowl, mix soup and milk until smooth.
  4. Layer half of the sliced potatoes in the baking dish, followed by half the beef mixture, and a bit of cheese. Repeat layers with remaining ingredients.
  5. Pour the soup mixture evenly over the top and cover tightly with foil.
  6. Bake for 45–50 minutes or until the potatoes are tender.
  7. Remove foil, sprinkle the remaining cheese on top, and bake uncovered for another 10 minutes until bubbly and golden.
  8. Garnish with chopped parsley and serve hot.

Notes

  • You can use cream of mushroom or cream of chicken soup, depending on taste or availability.
  • For a lighter version, use lean ground turkey and reduced-fat cheese.
  • Leftovers refrigerate well; reheat gently for best texture.
  • To speed prep, slice potatoes ahead of time and store in water to prevent browning.
