Description
Cheesy Ground Beef Enchiladas are a quick, one-pan family-friendly dinner with boldly seasoned beef, enchilada sauce, and melty cheese.

- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1½ cups enchilada sauce
- 8 corn tortillas
- 1½ cups shredded cheddar or Mexican blend cheese (divided)
- 2 tbsp chopped cilantro or green onions (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
- Stir in chili powder, cumin, paprika, salt, and black pepper.
- Spoon a small amount of enchilada sauce into the bottom of the skillet.
- Fill each tortilla with the beef mixture and a sprinkle of cheese, roll tightly, and place seam-side down in the skillet.
- Pour remaining enchilada sauce evenly over the tortillas and top with remaining cheese.
- Bake uncovered for 18–22 minutes, or until bubbly and the cheese is fully melted.
- Garnish with cilantro or green onions and serve warm.
