- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup uncooked long-grain white rice
- 2 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1½ cups shredded cheddar cheese (divided)
- 2 tbsp chopped parsley or green onions (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
- Stir in uncooked rice, beef broth, cream of mushroom soup, salt, black pepper, and paprika. Mix until well combined.
- Remove from heat and stir in 1 cup of shredded cheddar cheese.
- Transfer mixture to the prepared baking dish and spread evenly.
- Cover tightly with foil and bake for 30–35 minutes, or until the rice is tender.
- Remove foil, sprinkle remaining cheese over the top, and bake uncovered for 8–10 minutes until melted and bubbly.
- Let rest for 5 minutes, garnish if desired, and serve warm.
Notes
- Leftovers refrigerate well for up to 3 days.
- For a lighter version, use part-skim cheese or lighter cream soup if desired.
- To customize, try mixing in sautéed vegetables like bell peppers or mushrooms.
