Cheesy Dynamite Chicken Buns deliver crispy, spicy bites with oozy cheese and bold flavor.
Ingredients

- 2 cups cooked shredded chicken
- 1/2 cup mayonnaise
- 2 tbsp sriracha or chili sauce (adjust for spice)
- 1 tbsp ketchup
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1 cup shredded mozzarella or cheddar cheese
- 14 mini buns or dinner rolls
- Butter, melted (for brushing)
- Sesame seeds (optional)
- Chopped parsley or chives (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, mix shredded chicken, mayonnaise, sriracha, ketchup, garlic powder, salt, and pepper until well coated.
- Slice the tops off the buns and gently hollow out the centers.
- Fill each bun with the spicy chicken mixture and top generously with shredded cheese.
- Replace the bun tops, brush with melted butter, and sprinkle sesame seeds on top if desired.
- Bake for 10–12 minutes until the cheese is melty and the tops are golden brown.
- Garnish with parsley or chives and serve warm with extra dynamite sauce for dipping!
Notes
- For extra heat, increase the sriracha or chili sauce.
- Day-old buns can be easier to hollow out; fresh buns are fine too.
- Assemble ahead and refrigerate before baking for faster serving at a party.
- To reduce fat, use part-skim or lighter mayonnaise and a lower-fat cheese option.
- Can be frozen unbaked; thaw and bake as directed.
