  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1½ cups shredded cheddar or mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp chopped parsley or green onions (optional, for garnish)

Instructions

  1. Cook rotini pasta according to package directions until al dente. Drain and set aside.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Add chicken and season with Cajun seasoning, paprika, salt, and black pepper. Cook for 5–6 minutes until golden and cooked through. Remove chicken and set aside.
  4. In the same skillet, add garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth and heavy cream, stirring to combine.
  6. Simmer for 3–4 minutes until the sauce begins to thicken.
  7. Stir in cheddar or mozzarella and Parmesan cheese until melted and creamy.
  8. Return chicken to the skillet and add cooked pasta. Toss until everything is well coated.
  9. Simmer for 2–3 minutes until thickened and heated through.
  10. Garnish if desired and serve warm.
