- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup tomato sauce
- 1 can (16 oz) refried beans
- 8 flour tortillas
- 2 cups shredded Mexican blend cheese
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp chopped cilantro (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and sauté for 2–3 minutes until softened. Stir in garlic and cook for 30 seconds.
- Mix in taco seasoning, tomato sauce, salt, and black pepper. Simmer for 5 minutes.
- Spread a thin layer of beef mixture in the baking dish.
- Layer tortillas, refried beans, beef mixture, and cheese.
- Repeat layers, finishing with cheese on top.
- Bake uncovered for 25–30 minutes until bubbly and golden.
- Let rest for 5 minutes, garnish if desired, and serve warm.
Notes
- Make-ahead: Assemble, cover, and refrigerate up to 24 hours; bake until heated through.
- For a lighter version, use lean ground beef and part-skim cheese.
- Spice it up with jalapeños or hot sauce to taste.
- Leftovers refrigerate for 3–4 days; reheat well.
