- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3 cups peeled and diced potatoes
- 3 cups beef broth
- 1 cup milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 2 tbsp chopped parsley or green onions (optional, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
- Stir in diced potatoes, beef broth, salt, black pepper, and paprika. Bring to a boil.
- Reduce heat, cover, and simmer for 12–15 minutes until potatoes are tender.
- Stir in milk and heavy cream and heat gently without boiling.
- Gradually add shredded cheddar cheese, stirring until fully melted and smooth.
- Simmer for 2–3 minutes until thickened.
- Remove from heat, garnish if desired, and serve hot.
Notes
- You can adjust the thickness by adding more broth or potatoes as needed.
- For a lighter version, use part-skim cheese and milk.
- Leftovers refrigerate well and can be reheated gently on the stove.
- Make sure to use gluten-free beef broth if needed to keep it gluten-free.
- Garnish with chopped parsley or green onions for a fresh finish.
