  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups peeled and diced potatoes

  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  2. Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
  3. Stir in diced potatoes, beef broth, salt, black pepper, and paprika. Bring to a boil.
  4. Reduce heat, cover, and simmer for 12–15 minutes until potatoes are tender.
  5. Stir in milk and heavy cream and heat gently without boiling.
