Description

Cheddar Bay Hamburger Casserole – a cozy, cheesy weeknight dinner built around ground beef and a Cheddar Bay biscuit topping.

Ingredients

Scale
  • lbs ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup milk
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1½ cups shredded cheddar cheese
  • 1 box Cheddar Bay biscuit mix
  • ¾ cup cold milk (for biscuit mix)
  • 2 tbsp butter, melted
  • ½ tsp garlic powder

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Add onion and garlic and sauté for 2–3 minutes until softened.
  4. Stir in cream of mushroom soup, milk, salt, black pepper, and paprika until smooth.
  5. Transfer beef mixture to the prepared baking dish and spread evenly.
  6. Sprinkle shredded cheddar cheese evenly over the top.
  7. In a bowl, prepare the Cheddar Bay biscuit mix with cold milk according to package directions.
  8. Spoon biscuit dough evenly over the casserole.
  9. Bake uncovered for 30–35 minutes, or until the biscuit topping is golden and cooked through.
  10. Mix melted butter with garlic powder and brush over the hot biscuit topping.
  11. Let rest for 5 minutes before serving.

Notes

  • Can be made ahead: assemble, cover, and refrigerate up to 24 hours, then bake as directed.
  • For a lighter version, use lean ground beef and skim milk.
  • Leftovers reheat well; refrigerate up to 3–4 days or freeze for longer storage.
  • You can add frozen vegetables like peas or corn to the beef layer if desired.
  • Use gluten-free biscuit mix if needed for a gluten-free option.
