Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking sheet or cast iron skillet.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut in cold butter using a fork or fingertips until crumbly.
- Stir in cheddar cheese and herbs.
- Add buttermilk and egg, mixing just until a soft dough forms—don’t overmix.
- Turn dough onto a floured surface and shape into a round loaf. Place on the prepared sheet.
- Score a cross on top with a sharp knife and bake for 20-25 minutes, until golden brown and firm.
- Cool slightly before slicing. Serve warm with butter, soup, or even a drizzle of honey for a rustic touch.

- No yeast is needed; this is a quick, no-knead bread.
- Best served warm, straight from the oven with butter.
- Using buttermilk helps react with the baking soda for a lighter texture. If using milk, add 1 tsp vinegar and let stand 5 minutes.
