  • 1 cup diced smoked beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 1 cup frozen corn
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Butter or oil for cooking

Instructions

  1. Preheat oven to 350°F (175°C). Heat butter or oil in a large skillet over medium heat. Add onion and garlic; sauté until softened. Add ground beef and smoked beef; cook until browned. Stir in bell pepper, tomatoes, corn, and chili powder; season with salt and pepper. In a greased baking dish, spread cooked rice, top with beef mixture, and sprinkle cheese.
