- 2 cups graham cracker crumbs (or digestive biscuits)
- ½ cup melted butter
- 2 tbsp brown sugar
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 medium apples, peeled and finely chopped
- 2 tbsp brown sugar
- 1 tsp cinnamon
- 1 tbsp butter
- ½ cup caramel sauce (store-bought or homemade)
- Pinch of sea salt (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and brown sugar until combined. Press mixture evenly into the bottom of the pan. Bake for 8 minutes, then let cool slightly.
- In a large bowl, beat cream cheese, sugar, eggs, and vanilla until smooth. Pour over the cooled crust.
- In a skillet, cook apples with brown sugar, cinnamon, and butter for 5 minutes until softened. Spoon over cheesecake layer.
- Bake for 30–35 minutes or until the center is just set. Cool completely, then refrigerate for at least 3 hours.
- Before serving, drizzle generously with caramel sauce and a sprinkle of sea salt. Slice into bars and enjoy chilled!
