Butter Pecan Cookies – Soft, chewy cookies loaded with toasted pecans and rich, buttery flavor.

- 1 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs, room temperature
- 2 tsp vanilla extract
- 2¼ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1½ cups pecans, toasted and chopped
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Toast pecans in a dry skillet for 3–4 minutes until fragrant. Let cool and chop.
- Beat butter, brown sugar, and granulated sugar together until creamy and fluffy.
- Add eggs one at a time, then stir in vanilla extract.
- Whisk flour, baking soda, baking powder, and salt in a separate bowl. Mix into wet ingredients until just combined.
- Fold in toasted pecans.
- Scoop tablespoon-sized dough balls onto baking sheets, spacing 2 inches apart.
- Bake 9–11 minutes, until edges are golden but centers remain soft. Cool on sheets 5 minutes before transferring to a rack.
Notes
- Toast pecans until fragrant for the best flavor, then chop finely.
- Cool the cookies on the baking sheets for 5 minutes before transferring to a wire rack.
- Store leftovers in an airtight container at room temperature for up to 5 days; cookies can also be frozen for longer storage.
