Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • ½ cup granulated sugar
  • 1 large egg, room temperature
  • 2 tsp vanilla extract
  • 2¼ cups all-purpose flour (about 280 g)
  • 2 tsp cornstarch
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine salt
  • 1½ cups pecans, chopped

Instructions

  1. Preheat oven to 350°F (175°C). Line 2 baking sheets with parchment paper.
  2. Toast pecans in a dry skillet over medium heat for 3–4 minutes until fragrant, stirring often. Set aside to cool.
  3. In a large bowl, beat butter, brown sugar, and granulated sugar until creamy, 1–2 minutes.
  4. Beat in egg and vanilla.
  5. Whisk flour, cornstarch, baking powder, baking soda, and salt. Add to the wet ingredients and mix just until combined.
  6. Fold in most of the pecans, reserving a few tablespoons for topping.
  7. Scoop tablespoon-sized dough balls onto sheets, 2 inches apart. Gently press a few reserved pecans on top.
  8. Bake 9–11 minutes, until edges are set and centers look slightly soft. Cool on the sheet 5 minutes, then transfer to a rack.

  • Toast the pecans for extra nutty flavor.
  • For extra chewiness, do not overbake; bake until edges are set and centers are just soft.
  • Chilling the dough for 30 minutes can help control spreading and improve flavor.
